Crockpot Coconut Curry Pot Roast

THIS IS SO AMAZING- YOU CHOOSE YOUR MEAT!!!


1-2 lb Chuck roast

3 carrots chopped

2 parsnips chopped

2 med onion chopped

5 potato (sweet or yukon) quartered

1 cup celery chopped

1 16 oz can coconut milk

1 tablespoon curry powder

1 1/2 tsp cumin

1/2 tsp turmeric

1 cup beef stock or water

salt and pepper to taste

1 tsp Lawrys season salt

Season meat with Lawrys season salt, and sear in a hot skillet on the stovetop 3 minutes per side.  Meanwhile add all veggies to the bottom of your crock pot.  Add Meat to top of veggies.  Pour coconut milk, stock and spices to the skillet and pick up the yummy goodness from the pan.  Pour the mixture over meat into the crock pot.  Cover and cook for 6 hours on high. YEAH you did it now go have a glass of wine!  SOO Simple


Alterations: you can omit potatoes and serve over rice!  Use chicken thighs instead of beef!  Use all veggie but cook in half the time. You could conver this into soup as well.  SO many options!
