GF CHICKPEA Spinach salad

Are you Salad crazy like me??

I am always looking for new salads and extra protein and of course fun and flavorful! I was playing around with ingredients one day getting ready for a party and this is what I came up with.  This salad is great as a salad or as the base for chicken, and/or fish! 


Needless to say the day of the party this salad was gone!  If Chickpeas are not your thing than I encourage you to try another bean, maybe another white bean.  Black eyed peas would probably be nice too.  You don't have to be exact with the ingredients if you get the base right you should be fine.  If you don't have one item simply switch with another, add feta or goat cheese and really go all out!  Use tortilla chips to scoop it up and make it a side dish, either way you decide it is sure to please.  Enjoy and remember to play with your food!

CHICKPEA ARTICHOKE and SPINACH SALAD


1 28 oz can artichoke hearts
1 bag baby spinach
1 16 oz can chick peas (drained)
1 small red onion
3 large radishs
1 tomato
1/2 C red pepper

Dressing:
4 T balsamic Vinegar
3 T red wine vinegar
2 T Sugar
1 tsp salt
1 tsp pepper
1/2 C canola oil
Chop all the veggies into a small dice except the spinach.  In a large bowl, combine chick peas (drained)with all the veggies except the spinach.  It is important that the artichokes are not marinated- it will totally change the flavor.  In a small bowl make the dressing. First put the vinegar in the bowl, add sugar (or spenda), salt and pepper.  Stir to combine.  Then whip in oil.  Mix dressing over the chick pea mix and fold in the spinach.  Let sit for about 30 min before serving.
